Meet Russ Hog Roast Nuneaton’s catering manager! 

The friendly Russ has been with Hog Roast Nuneaton for 8 years, he previously helped out at his local butchers doing hog roast events before taking on a franchise of his own. The lovely thing about Hog Roast Nuneaton is that Russ has made it into a complete family affair! Russ and his delightful wife Cheryl prep and sort all the food out from their unit with Cheryl being particularly wonderful at making the salads, vegetarian options, canopies and desserts. She takes pride in what she makes and does a grand job with presentation. His eldest son and daughter were top chefs in the business, being sent off to different events with his daughter taking on her own franchise with her husband. His younger children have started to take on full roles in the franchise, whether that’s doing their own events or with the prep and cleaning down. 

The first year Russ started his franchise, he came up with a marvellous idea that has now spread to the other franchises. As the pig cooked in the tray, the juices built up around it, instead of draining the juices, he wanted to keep the juices in to give the opportunity for the juices to soak back up into the meat. In order to stop the juices from spilling, he decided to use the juices to make his stuffing. Not only does it give the hog roast a medieval vibe with the meat and stuffing being in the same trip, it makes the stuffing SO much more flavoursome! Guests always comment on how nice the stuffing is!

Which menu would you recommend to customers?

Russ would recommend his menu 4. This menu entails either a hog or spit roasted pig with amazing crackling and stuffing served into soft and crusty rolls. In addition to the pork, you get a choice of salads with Russ recommending the Italian-inspired tomato and buffalo mozzarella salad, classic Caesar salad and gourmet coleslaw. This menu also gives a potato option, Russ would recommend the herb-buttered new potatoes. Rather than being served on disposable crockery, this menu is served on real crockery with stainless steel cutlery, giving it a more sophisticated vibe. 

What has been your favourite event so far?

Russ did a job serving 4000 people at his local theme park, Drayton Manor. It was a corporate fun day where the company had rented out the entire park. It was such a fun atmosphere and the best part was being able to have a go on all the rides once they were finished!
